Green Coconut Rice

  • THE RICE
  • 1 cup jasmine rice
  • 2 cups water
  • 1 pinch salt
  • THE GREEN SAUCE
  • 1 can of coconut milk
  • 1 bunch fresh herbs like cilantro, mint, parsley or basil
  • 1 lime, zested and juiced
  • salt to taste

    Make your rice. Add 1 cup rice to a sauce pan and add 2 cups water with a pinch of salt. Bring rice to a boil, cover with a lid, reduce to minimum and cook rice for 20 minutes or until fluffy.

    In the meantime, make the green sauce. Add everything in a blender and blend it until well combined. You'll have a bright green liquid. When the rice is done, add the green sauce from the blender right into your rice pot. Stir well. Serve hot.
