  • 1 whole chicken
  • 1 doz. corn tortillas
  • 1 large can Las Palmas green enchilada sauce
  • Longhorn cheese (garnish)
  • chopped green onion (garnish)
  • black olives (optional)

Directions

    Boil chicken without skin until tender.

    Let chicken cool, shred the chicken and put aside.

    Lightly fry tortillas in oil. Dip the tortillas in the enchilada sauce; roll with chicken and place in a greased pan.

    Pour the remaining sauce over the tortilla rolls.

    Garnish with cheese, green onion and olives. Bake at 350° for 20 minutes.
