  • 1 C. (tightly packed) fresh spinach leaves, rinsed, liquid removed
  • 1 c. (loosely packed) fresh parsley leaves
  • 1/2 c. cider vinegar
  • 1 1/2 teaspoon dry basil, crumbled
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon freshly grnd black pepper
  • 1/2 teaspoon grnd cumin
  • 2 cloves garlic
  • 1 1/2 c. extra virgin olive oil

Directions

    Combine spinach leaves, parsley, vinegar, basil, salt, pepper, cumin and garlic in food processor; process till smooth.

    With machine running, slowly add in 1/2 c. of the oil; add in remaining oil all at once.

    Process till smooth.

    Store dressing in tightly covered container in refrigerator up to 3 weeks.
