  • 1 pound onions
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon sugar
  • 1 tablespoon butter
  • Plantain Cakes
  • 2 large green plantains (~1 pound 2 ounces)
  • 1/4 cup oil (any high smoke point oil will do)
  • 1/2 teaspoon kosher salt or to taste
  • 1/2 cup sauteed onion mixture from above

    ["Peel and chop onion. Heat oil in a frying or saute pan over low heat. Add chopped onions, kosher salt and sugar. Cook slowly, stirring occasionally until soft and translucent (do not brown) ~ 20-30 minutes. Add butter and continue cooking for 5 more minutes. Set aside.
