Green Rice

  • 4 oz (about 2 cups) spinach
  • 1/2 cup fresh cilantro, chopped
  • 3 cup water
  • 3/4 cup vegetable oil (I use canola)
  • 2 1/2 cup long grain white rice
  • 1 tsp salt (you can also use sea salt)
  • 3/4 cup corn kernels
  • 1 garlic clove (or 1/4 teaspoon minced garlic)
  • 1 cup thinly cut spinach
  • 1 hot chili pepper, fresh with the stem removed

Directions

    In a blender, combine the 2 cups spinach, cilantro, garlic and chili pepper.

    Blend until smooth.

    Set aside.

    In a medium sized skillet over medium heat, heat the oil.

    Add the rice and cook, stirring constantly, until lightly golden, about 5 minutes.

    Add the vegetable mix, water, salt and corn and bring to a boil.

    Cook for 5 minutes.

    Lower the heat and simmer, covered, until the liquid is absorbed, about 15 minutes.

    Add the 1 cup cut up spinach before serving.
