- 1 head escarole
- 4 whole garlic cloves
- 2 Tbsp. olive oil
- 1/2 tsp. crushed red pepper (optional)
- 1 (16 oz.) can cannellini beans with juice
- 1/2 c. water
- salt and pepper to taste
Directions

1Wash and tear escarole.

2Slowly saute garlic cloves in oil. Add red pepper, water and beans and cook.

3Add greens that have already been steamed in separate pan.

4Salt and pepper to taste. May top with grated Parmesan cheese.
