Ingredients

  • 1 head escarole
  • 4 whole garlic cloves
  • 2 Tbsp. olive oil
  • 1/2 tsp. crushed red pepper (optional)
  • 1 (16 oz.) can cannellini beans with juice
  • 1/2 c. water
  • salt and pepper to taste

Directions

    Wash and tear escarole.

    Slowly saute garlic cloves in oil. Add red pepper, water and beans and cook.

    Add greens that have already been steamed in separate pan.
  4. 4
    Salt and pepper to taste. May top with grated Parmesan cheese.
