  • 3/4 c. water
  • 1 lb. fresh collard greens, cleaned and chopped or 1 (10 oz.) pkg. frozen chopped collard greens, thawed*
  • 1 medium onion, peeled and chopped
  • 3 large tomatoes, cubed
  • 1 c. canned coconut milk (unsweeten)
  • dash of salt

Directions

    In a large saucepan, bring 3/4 cup water to a boil over high heat.

    Add collard greens, reduce heat to low and simmer for 4 to 5 minutes.

    Add onions, tomatoes, coconut milk and salt; stir well.

    Cook, uncovered, 20 minutes more.

    Serve hot.
