- 3/4 c. water
- 1 lb. fresh collard greens, cleaned and chopped or 1 (10 oz.) pkg. frozen chopped collard greens, thawed*
- 1 medium onion, peeled and chopped
- 3 large tomatoes, cubed
- 1 c. canned coconut milk (unsweeten)
- dash of salt
Directions

1In a large saucepan, bring 3/4 cup water to a boil over high heat.

2Add collard greens, reduce heat to low and simmer for 4 to 5 minutes.

3Add onions, tomatoes, coconut milk and salt; stir well.

4Cook, uncovered, 20 minutes more.

5Serve hot.
