Grilled Eggplant Rolls

  • 2 eggplants
  • 1 corn
  • 3 tablespoons mayonnaise
  • 3 tablespoons cream cheese
  • 3 tablespoons grated cheese
  • 1 carrot
  • cherry tomatoes amount needed
  • 1/2 red pepper
  • 1/2 green pepper
  • sea salt to taste

Directions

    Wash the eggplants and cut into thin slices, grilled over hot iron on each side.

    Wash and boil the corn, grate and mix with mayonnaise, white cheese and grated cheese, salt to taste.

    Roast the peppers and cut into strips finite.

    Peel, wash and cut into strips and boiled carrots.

    Place a portion of filling on each grilled eggplant, carrot sticks and put peppers and overwhelming.

    Garnish to taste with cherry tomatoes, carrots and roasted peppers.
