Grilled Scallops

Ingredients
- 16 large scallops, rinsed well
- 4 tsp sugar (or 8 teaspoons sugar substitute)
- 4 to 6 fresh minced garlic cloves (or 1 to 1 1/2 teaspoons minced garlic in a jar)
- 4 green onions, minced
- 2 tsp paprika
- 2 tbsp lemon juice
- 1/2 cup plus 2 tablespoons olive oil, divided
- 1 pepper to taste
Directions

1Wash scallops and pat dry.

2Brush with 2 tablespoons olive oil.

3Combine the sugar, garlic, green onions, paprika, 1/2 cup olive oil, lemon juice and pepper.

4Mix well.

5Heat your grill or grill pan to high heat.

6Place the scallops on the grill for 3 to 5 minutes per side, basting generously and frequently with the prepared sauce.

7You want the scallops to be lightly browned on each side.

8Be careful not to leave them on too long, they should be firm but not overcooked.

9Overcooking can make them rubbery.
