- 1 Tbsp. minced onion
- 1/8 tsp. minced garlic
- 1/2 tsp. lemon juice
- 1/4 tsp. salt
- fresh ground pepper
- 1 medium size ripe avocado
- 1 small ripe tomato
- boiling water
- 1/2 tsp. seeded and minced chili pepper or salsa to taste
Directions

1Peel avocado and mash with fork in a mixing bowl.

2Blend in garlic.

3Stir in lemon juice, salt and pepper.

4Blend in onion. Using slotted spoon, blanch tomato in boiling water; remove and peel off skin.

5Finely chop tomato and add to avocado mixture. Add chili pepper; blend thoroughly.

6Cover with plastic wrap; refrigerate until ready to use.

7Makes about 3/4 cup.
