Guacamole Deviled Eggs

  • 12 large eggs
  • 1/2 cup sour cream
  • 3 tablespoons minced red onion
  • 1 large ripe avocado, pitted and diced
  • 1 small clove garlic, minced
  • Juice of 1 lime
  • Kosher salt and freshly ground black pepper

Directions

    Add the eggs to a saucepan and cover with cold water.

    Bring to a boil, turn off the heat, cover with a lid and let sit for 10 minutes.

    Drain the eggs, rinse and peel under cold water.

    Add the sour cream, red onion, avocado, garlic and lime juice to a large bowl.

    Slice the eggs in half and pop out the yolks into the mixture.

    Mash everything up until nice and smooth.

    Taste for seasoning and adjust if necessary.

    Fill the whites back up with the filling.
