- 1 cup minced onion
- 1 cup (4 ounces) shredded Cheddar cheese
- 1 cup diced celery
- 1 cup boiling water
- 3/4 pound ground, cooked ham
- 1/3 cup olive oil
- 1 1/4 teaspoons salt
- 1/4 teaspoon pepper
Directions

1Combine all ingredients in a large mixing bowl, stirring until well blended. Spoon mixture into a lightly greased 2-quart casserole. Cover and bake at 325° for 2 hours or until rice is tender.
