Ham & Cornbread Casserole

Ingredients
- 2 cups ham cubed
- 1 each scallions, spring or green onions bunch, chopped
- 1/4 cup butter melted
- 2 large eggs beaten
- 11 ounces mexicorn can (niblets with peppers), drained
- 8 oz creamed corn
- 1 cup cornmeal white, self-rising
- 3/4 cups buttermilk (or make your own)
- 1 cup cheddar cheese shredded
Directions

1Preheat oven to 350F (180C).

2Spray 12x8 inch (2 qt) baking dish with non-stick spray.

3In large bowl, combine all ingredients except cheese.

4Pour into prepared baking dish.

5Bake in preheated oven for 45 to 55 minutes or until golden brown and set.

6Sprinkle with cheese and bake an additional few minutes, until cheese is melted.

7Let stand 5 minutes before serving.

8Cut into squares.
