Ingredients

  • 2 cups ham cubed
  • 1 each scallions, spring or green onions bunch, chopped
  • 1/4 cup butter melted
  • 2 large eggs beaten
  • 11 ounces mexicorn can (niblets with peppers), drained
  • 8 oz creamed corn
  • 1 cup cornmeal white, self-rising
  • 3/4 cups buttermilk (or make your own)
  • 1 cup cheddar cheese shredded

Directions

    Preheat oven to 350F (180C).

    Spray 12x8 inch (2 qt) baking dish with non-stick spray.

    In large bowl, combine all ingredients except cheese.

    Pour into prepared baking dish.

    Bake in preheated oven for 45 to 55 minutes or until golden brown and set.

    Sprinkle with cheese and bake an additional few minutes, until cheese is melted.

    Let stand 5 minutes before serving.

    Cut into squares.
