- 3 Tbsp. butter
- 1/3 c. flour
- 1/2 tsp. salt
- 1 c. milk
- 2 c. cooked ground ham
- 1 Tbsp. prepared mustard
- 1 egg, beaten with 1 Tbsp. water
- 1 Tbsp. chopped onion
- cracker crumbs
Directions

1Melt butter; blend in flour and salt.

2Add milk and cook over low heat until very thick.

3Cool.

4Add ham, onion and mustard. Chill overnight.

5Shape into 12 small croquettes.

6Roll in crumbs; dip in beaten egg, then in crumbs.

7Fry in deep fat at 375°.
