  • 3 Tbsp. butter
  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1 c. milk
  • 2 c. cooked ground ham
  • 1 Tbsp. prepared mustard
  • 1 egg, beaten with 1 Tbsp. water
  • 1 Tbsp. chopped onion
  • cracker crumbs

Directions

    Melt butter; blend in flour and salt.

    Add milk and cook over low heat until very thick.

    Cool.

    Add ham, onion and mustard. Chill overnight.

    Shape into 12 small croquettes.

    Roll in crumbs; dip in beaten egg, then in crumbs.

    Fry in deep fat at 375°.
