- 1 1/2 lb. beets
- 1/3 c. granulated sugar
- 1/2 tsp. salt
- 1 Tbsp. cornstarch
- 1/2 c. vinegar
- 2 Tbsp. butter
- 1 tsp. minced onion
Directions

1Cook beets until tender; cool slightly.

2Peel and dice.

3Blend sugar, salt and cornstarch in another pan.

4Add vinegar; stir until mixed.

5Cook until thick and smooth.

6Stir constantly.

7Add butter and onion.

8Stir; pour over beets (heat if desired).

9Makes about 6 servings.
