- 1/4 c. hot beet juice
- 1/4 c. vinegar
- 1 lb. can sliced beets, drained

1In a 2-quart saucepan, combine sugar, cornstarch, salt and pepper.

2Add beet juice and vinegar.

3Simmer, uncovered, over low heat; stir until clear and thickened, about 5 minutes.

4Add beets and heat until hot. Yield: 4 servings.
