  • 1/4 c. sugar
  • 2 tsp. cornstarch
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. hot beet juice
  • 1/4 c. vinegar
  • 1 lb. can sliced beets, drained

Directions

    In a 2-quart saucepan, combine sugar, cornstarch, salt and pepper.

    Add beet juice and vinegar.

    Simmer, uncovered, over low heat; stir until clear and thickened, about 5 minutes.

    Add beets and heat until hot. Yield: 4 servings.
