  • 1/3 c. sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • dash of pepper
  • 1/4 c. vinegar
  • 1 can diced or small whole beets
  • 1 c. beet liquid plus water

Directions

    Combine sugar, cornstarch, salt and pepper in a 1-quart casserole.

    Stir in vinegar and beet liquid.

    Add beets.

    Cover. Microwave on High 4 to 5 minutes until slightly thickened.

    Let stand 3 minutes before serving.
