- 12 cup hazelnuts
- 12 cup unsalted butter
- 12 teaspoon vanilla extract

1Preheat oven to 350.

2Toast hazlenuts on baking sheet for 10 - 15 minutes or until they are fragrant.

3Make sure to shake pan several times during roasting.

4Dump them onto a kitchen towel and fold the towel over so they will steam.

5Let cool for 15 minutes and then rub with towel to release the skin.

6Process nuts in a food processor until they are finely chopped.

7Add butter in small pieces along with the vanilla and process until smooth.

8Refrigerate butter until needed.
