- 5 c. all-purpose flour, divided
- 2 c. whole wheat flour
- 1/2 c. wheat germ
- 1 c. chopped pecans
- 2 tsp. salt
- 2 pkg. (1/4 oz. each) fast-rise yeast
- 1 c. water
- 1 c. plain nonfat yogurt
- 1/3 c. honey
- 1/4 c. margarine or butter
- 3 eggs (at room temperature)
Directions

1Set aside 1 cup of all-purpose flour.

2In a large bowl, mix remaining 4 cups of all-purpose flour, whole wheat flour, wheat germ, pecans, salt and yeast.

3In a saucepan over low heat, heat water, yogurt, honey and margarine until very warm (125° to 130°); stir into dry mixture.

4Mix in eggs and only enough reserved flour to make soft dough.

5On lightly floured surface, knead until smooth and elastic, about 8 to 10 minutes.

6Cover; let rest 10 minutes. Divide dough in half; shape each half into smooth ball.

7Place in 2 greased 8-inch round cake pans.

8Cover; let rise in warm place (80° to 85°) until doubled in size, about 1 hour and 15 minutes.

9Bake at 375° for 35 to 40 minutes or until golden brown.

10Remove from pans and cool on wire racks.

11Makes 2 loaves.
