- 2 1/2 c. all-purpose flour
- 2 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 c. light margarine (room temperature)
- 1 tsp. vanilla or almond extract
- 1 c. plain, low-fat yogurt
- 3 egg whites
Directions

1Mix all ingredients together in a large bowl.

2Beat with mixer at high speed for 3 to 4 minutes.

3Pour into a 10-inch Bundt pan coated with nonstick vegetable spray.

4Bake at 350° for 1 hour. (Test for doneness.

5It may need to cook longer.)

6Cool upright for at least 30 minutes.

7Invert pan; remove cake and serve. Makes 16 servings.
