Ingredients

  • 2 1/2 c. all-purpose flour
  • 2 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. light margarine (room temperature)
  • 1 tsp. vanilla or almond extract
  • 1 c. plain, low-fat yogurt
  • 3 egg whites

Directions

    Mix all ingredients together in a large bowl.

    Beat with mixer at high speed for 3 to 4 minutes.

    Pour into a 10-inch Bundt pan coated with nonstick vegetable spray.

    Bake at 350° for 1 hour. (Test for doneness.

    It may need to cook longer.)

    Cool upright for at least 30 minutes.

    Invert pan; remove cake and serve. Makes 16 servings.
