- 2 c. chicken broth
- 1 can cream of chicken soup, undiluted
- 1 1/2 c. (10 oz. pkg.) yellow rice with saffron seasoning
- 2 green onions, chopped
- 2 Cornish hens, split in half lengthwise
- salt and pepper to taste
Directions

1Spray a 3-quart casserole well with a nonstick spray.

2Whisk broth and soup until smooth.

3Stir in rice and onion and mix well. Remove fatty pads and skin, if desired.

4Arrange hens, cut side down on top of rice mixture.

5Season with salt and pepper.

6Spray a sheet of tinfoil and cover the casserole dish.

7Bake at 350° for 1 1/2 hours.
