- 2 large potatoes, baked and cooled
- 2 tablespoons butter, melted
- 14 cup nonfat milk
- 1 12 tablespoons parsley, chopped
- 18 teaspoon thyme
- salt
- pepper
- paprika
Directions

1Cut the cooked potatoes in half length-wise.

2Scoop out the meat and place in a mixing bowl.

3Add the butter, milk, herbs, and seasonings (Salt and pepper to taste).

4Mix until smooth and then spoon the mixture back into the shells.

5Sprinkle with paprika and bake at 350 degrees until lightly browned.
