  • 1 1/2 c. hot chicken bouillon
  • 1/2 c. uncooked regular rice
  • 1/4 tsp. Italian seasoning
  • 1/4 tsp. garlic powder
  • 3 to 4 medium carrots, sliced
  • 1 lb. orange roughy fillets
  • paprika
  • 1/2 c. shredded Cheddar cheese

Directions

    Preheat oven to 375°.

    In 8 x 12-inch baking dish, combine hot bouillon, uncooked rice and seasonings.

    Top with sliced carrots. Bake covered at 375° for 15 minutes.

    Add fish fillets and sprinkle lightly with paprika.

    Bake covered at 375° for 15 minutes or until fish flakes easily with fork.

    Stir rice.

    Top fish with Cheddar cheese.

    Bake uncovered 3 minutes.
