- 6 to 8 ripe tomatoes, peeled and thickly sliced
- 2/3 c. olive oil or safflower oil
- 1 c. vinegar
- 1/4 c. chopped green onions including green tops
- 1/4 c. freshly chopped parsley
- 1 tsp. salt
- 2 tsp. thyme
- 1 clove garlic, crushed and chopped fine
- 3 Tbsp. sugar
Directions

1Place sliced tomatoes in a large flat serving dish.

2Mix the remaining ingredients together and pour over tomatoes.

3Cover and refrigerate at least 6 hours.
