Ingredients

  • 6 to 8 ripe tomatoes, peeled and thickly sliced
  • 2/3 c. olive oil or safflower oil
  • 1 c. vinegar
  • 1/4 c. chopped green onions including green tops
  • 1/4 c. freshly chopped parsley
  • 1 tsp. salt
  • 2 tsp. thyme
  • 1 clove garlic, crushed and chopped fine
  • 3 Tbsp. sugar

Directions

    Place sliced tomatoes in a large flat serving dish.

    Mix the remaining ingredients together and pour over tomatoes.

    Cover and refrigerate at least 6 hours.
