- 2 cups biscuit crumbs
- 3-1/2 oz. butter, melted
- 1/4 cup water
- 1 tbsp. gelatine
- 8 oz. cream cheese, softened
- 1 can Highlander condensed milk
- 1/4 cup lemon juice
- 2 tsp. grated lemon rind
- Fresh
- canned fruit
Directions

1Combine the biscuit crumbs and melted butter.

2Press over the base and sides of a 22-cm.

3loose-based flan tin.

4Chill until the crust is firm.

5Place the water in a shallow bowl.

6Sprinkle the gelatine over and stand for 5 minutes or until the gelatine swells.

7Heat over hot water until gelatine dissolves.

8Cool.

9Beat the cream cheese until soft.

10Gradually beat in the condensed milk, gelatine, lemon juice and rind.

11Pour into the crumb crust.

12Chill until set.

13Decorate with fresh or well-drained canned fruit before serving.
