Ingredients
- 1 c. brown rice
- 2 Tbsp. olive oil
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped white mushrooms
- 2 c. chicken broth
- 1/2 tsp. thyme
- 1/2 tsp. crushed oregano
- 1/8 tsp. coarsely ground pepper
- 2 c. grapes
- 2 Tbsp. chopped parsley
- 1/2 c. chopped almonds or Macadamia nuts
Directions

1Brown rice in oil; remove from skillet and set aside.

2Cook and stir onions and celery in same skillet.

3Stir in mushrooms, broth, rice and seasonings.

4Simmer, covered, 25 to 30 minutes or until rice is cooked and liquid is absorbed.

5Stir in grapes, nuts and parsley; cook about 2 minutes or until grapes are thoroughly heated.
