  • 2 eggs
  • 3/4 c. sugar
  • 1/3 c. sifted flour
  • 1 tsp. vanilla
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 1 Tbsp. butter, melted and cooled
  • 2 2/3 c. flaked coconut

Directions

    Beat eggs until foamy. Gradually add sugar, beating constantly, until thickened and light in color, takes about 5 minutes on electric mixer. Fold in dry ingredients, butter, vanilla and coconut. Mix well. Drop from teaspoon on greased and floured baking sheet. Bake at 325° for 15 minutes until golden brown around edges. Let stand a few seconds on sheet. Remove and cool on bag or rack. Makes 3 dozen.
