Holiday Mashed Potatoes

- 3 lb. potatoes (5 or 6)
- 1/2 c. milk
- 8 oz. cream cheese, softened
- 2 eggs, lightly beaten
- 1/4 c. margarine
- 1/4 c. or less finely chopped onion
- 1/2 c. sour cream
- 1 tsp. salt
Directions

1Cook potatoes.

2When done, mash hot potatoes in a large bowl until smooth.

3Add cream cheese in small pieces, then oleo.

4Beat until completely mixed.

5Mix in sour cream.

6Add eggs and onion to milk, then mix into potatoes.

7Add salt and beat until light and fluffy.

8Place in a large, well-greased, square or oblong casserole dish.

9Refrigerate several hours or overnight.

10When ready to serve, bake at 350° for approximately 35 minutes.
