- 3 Tbsp. butter or margarine
- 1 1/2 c. uncooked regular rice
- 1 c. chopped onion
- 1 c. chopped celery (including celery leaves)
- 1 (4 oz.) can sliced mushrooms (undrained)
- 2 c. chicken broth
- 1 tsp. salt
- 3/4 tsp. poultry seasoning
- 1/4 c. toasted almonds (optional)
- parsley
Directions

1Melt butter in large skillet.

2Add next 4 ingredients and saute until vegetables are tender.

3Add chicken broth and seasonings; stir well.

4Spoon rice mixture into a 12 x 8 x 2-inch baking dish.

5Cover and bake at 350° for 30 to 35 minutes or until rice is done.
