  • 3 Tbsp. butter or margarine
  • 1 1/2 c. uncooked regular rice
  • 1 c. chopped onion
  • 1 c. chopped celery (including celery leaves)
  • 1 (4 oz.) can sliced mushrooms (undrained)
  • 2 c. chicken broth
  • 1 tsp. salt
  • 3/4 tsp. poultry seasoning
  • 1/4 c. toasted almonds (optional)
  • parsley

Directions

    Melt butter in large skillet.

    Add next 4 ingredients and saute until vegetables are tender.

    Add chicken broth and seasonings; stir well.

    Spoon rice mixture into a 12 x 8 x 2-inch baking dish.

    Cover and bake at 350° for 30 to 35 minutes or until rice is done.
