Ingredients

  • 1/2 c. sugar
  • 1/2 c. firmly packed brown sugar
  • 2 Tbsp. cornstarch
  • 1/2 c. liquid (orange or pineapple juice) or 1/4 c. both or 1/4 c. either and 1/4 c. water
  • 1/4 c. melted butter or margarine
  • salt to taste
  • 4 or 5 medium yams, partially cooked, peeled and sliced
  • cinnamon (optional)

Directions

    Combine sugar and starch. Blend well. Stir in liquid, butter and salt. Simmer over low heat, stirring constantly, until begins to thicken. Place yams in lightly greased 2-quart casserole. Add sauce. Bake at 350° for 30 minutes.
