- 1/2 red onion, coarsely chopped
- 1/2 cucumber, piled, seeded and coarsely chopped
- 1/2 cup cilantro coarsely chopped
- 1 jalapeno, sliced
- 1 can(28 oz) diced tomatoes, drained
- salt and pepper
- 2 tablespoons olive oil
Directions

1Put onion and jalapeno in food processor and pulse 3-4 times.

2Add cucumber and cilantro, pulse a few times.

3Add drained diced tomatoes, salt, pepper and olive oil, pulse a few times.

4Serve with corn tortillas, pita chips or cucumber slices.

5If you can make the day before it is even better.

6It will hold 5-6 days in the fridge.
