  • 1 cup nuts assorted, walnuts, hazelnuts, and almonds, or preferred nuts, coarsely chopped
  • 1/2 cup olive oil
  • 1/2 cup honey
  • 250 grams brown sugar
  • 5 eggs
  • 1/2 cup port wine
  • 1 tablespoon ground cinnamon
  • 300 grams flour
  • 1 teaspoon baking powder

Directions

    Preheat oven 180 degrees Celsius.

    Grease a square pan with margarine, and sprinkle with flour. Set aside.

    Chop the nuts, and dredge slightly in flour.

    Whisk the oil, honey, and sugar. Add the eggs one at a time, mixing well between each addition.

    Add port wine and cinnamon, mix again.

    Add the flour and baking powder, and beat until the dough is smooth.

    Add the nuts with a spoon. Stir with a spoon, from bottom to top, without beating.

    Pour the dough in the cake pan, and bake for about 40 minutes.

    Check for doneness, and remove from the oven.

    When the cake is warm/cold, cut into squares, and sprinkle with powdered sugar.
