- 4 c. diagonally sliced carrots
- 3 Tbsp. butter or margarine
- 3 Tbsp. honey
- 3 Tbsp. finely chopped fresh mint
- garnish: fresh mint sprigs
Directions

1Cook carrots in a small amount of boiling water 6 to 8 minutes or until tender.

2Drain and set aside.

3Combine butter and honey in a large skillet.

4Cook over medium low heat until butter melts. Stir in chopped mint; cook 1 minute.

5Add cooked carrots and toss gently until carrots are glazed.

6Cook just until carrots are thoroughly heated.

7Transfer to a serving platter and garnish with fresh mint sprigs.
