- 1 (20 oz.) can pineapple slices in juice
- 4 boneless, skinless chicken breasts
- 2 Tbsp. vegetable oil
- 2 large cloves garlic, pressed
- 1 tsp. thyme, crumbled
- 1 Tbsp. cornstarch
- salt and pepper to taste
- 1/4 c. honey
- 1/4 c. Dijon mustard
Directions

1Drain pineapple; reserve juice.

2Sprinkle chicken with salt and pepper to taste.

3Rub with garlic and thyme.

4Brown in hot oil in nonstick skillet.

5Combine 2 tablespoons reserved juice with cornstarch.

6Combine honey and mustard; stir into skillet with remaining juice.

7Spoon over chicken.

8Cover and simmer 15 minutes.
