- 8 oz. dried black-eyed peas (soaked overnight)
- 1 c. rice, washed and drained
- 1 tsp. salt
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 1 garlic clove, chopped
- 1 lb. can tomatoes
- 1/2 tsp. black pepper or cayenne
- 1 Tbsp. cooking oil
- 1 tsp. tamari
Directions

1Drain and rinse peas.

2Bring to boil with 6 cups water in large pot.

3Reduce heat and simmer, covered, for 1 1/2 hours.

4Add rice and salt and continue cooking.

5Meanwhile, saute garlic, onions and green peppers in oil.

6Add the tomatoes, black pepper or cayenne and tamari.

7Pour mixture into pot with rice and peas.

8Stir to mix.

9Cook 15 to 20 minutes or until rice and peas are tender.
