Hot Chicken With Peanuts

Ingredients

  • 2 chicken breasts, cubed, or 1/2 lb.
  • 1 egg white
  • 4 tsp. cornstarch
  • 2 Tbsp. soy sauce
  • 1/2 c. scallions, sliced
  • 1 c. peanut oil
  • 1/4 tsp. crushed red pepper
  • 1 tsp. sugar
  • 2 Tbsp. dry sherry or water
  • 1/2 c. peanuts

    Combine chicken, egg, 3 teaspoons cornstarch and 1 tablespoon soy sauce.

    Mix well.

    Refrigerate 1 hour.

    In skillet, heat peanut oil and stir-fry chicken.

    Drain.

    Pour off all but 1 tablespoon of oil from skillet.

    Add pepper and chicken.

    Stir-fry 1 minute. Blend remaining cornstarch, soy sauce, sugar and sherry or water. Add to chicken mixture while stirring over high heat until coated. Stir in scallions and peanuts.

    Serve with rice and a dish of chilled fruit like mandarin oranges on the side.
