- 2 (15 oz.) cans black-eyed peas
- 1 (10 oz.) can Ro-Tel tomatoes, chopped
- 1/4 c. margarine
- 1 c. chopped onion
- 1 c. chopped celery
- 1 c. chopped bell pepper
Directions

1Combine peas and tomatoes.

2In medium skillet, melt margarine and saute last 3 ingredients.

3Add sauteed vegetables to the pea mixture.

4Stir well.

5Pour into serving dish, cover and chill until served.

6This dish is best served at room temperature as if it were a salad.
