Hot Salsa

Ingredients

  • 1 peck small tomatoes
  • 3/4 c. sugar
  • 2 Tbsp. pickling salt
  • 2 c. vinegar
  • 1/2 c. lemon juice
  • 1/4 c. Worcestershire sauce
  • 1 Tbsp. prepared mustard
  • 6 to 8 cloves garlic, chopped
  • 1 Tbsp. basil leaves
  • 4 large onions, diced
  • 4 green and/or red bell peppers, diced
  • 8 to 10 hot peppers, diced

Directions

    Peel and quarter tomatoes.

    Add sugar, salt, vinegar, lemon juice, Worcestershire sauce, mustard, garlic and basil.

    Bring mixture to a boil and simmer about 2 hours until slightly thickened.

    Add onions, bell peppers and hot peppers to mixture and return to boil.

    Taste and add more hot peppers if desired.

    Pour into hot jars and seal.

    Makes 8 to 10 pints.
