- 1 lb. medium Russet potatoes, cut into julienne strips
- 1/2 c. chopped red bell pepper
- 1/4 c. finely chopped green onions
- 1 Tbsp. rice wine vinegar
- 2 tsp. hoisin sauce
- 2 tsp. sesame seed, toasted
Directions

1Soak potatoes in cold water 15 minutes; drain and pat dry with paper towels.

2Arrange potatoes in a single layer in a large shallow pan coated with cooking spray.

3Bake at 450° for 30 minutes, stirring every 10 minutes.

4Combine potatoes, bell pepper and green onions in a medium bowl.

5Combine vinegar and hoisin sauce in a small bowl.

6Pour over potato mixture, tossing gently. Sprinkle with sesame seed and serve immediately.
