  • 4 cups chickpeas
  • 2 lemons juice
  • 2 cloves garlic chopped
  • 4 tablespoons olive oil
  • 3 tablespoons tahini
  • salt
  • sumac optional

    Drain and rinse the chickpeas. In a blender, mix them finely with the lemon juice, garlic cloves, olive oil, tahini, salt and a pinch of sumac. If the dough is a little thick, add a little water to make it less thick. If you want a smoother consistency, strain to remove the skin from chickpeas. Keep in a cool place for at least one hour before serving. Serve with pita bread or Lebanese bread.
