- 1 head garlic
- 1 (19 oz.) can chickpeas, drained and rinsed or 2 c. cooked chickpeas
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. tahini
- 2 Tbsp. chopped fresh parsley (optional)
- salt to taste
Directions

1Preheat oven to 425°.

2Remove loose papery outside skin from garlic head without separating the cloves.

3Slice off the top 1/2-inch.

4Wrap in small square of foil and roast 40 minutes until garlic is very soft.

5Unwrap and cool slightly.

6Separate cloves and peel.
