- 3 c. canned chickpeas, drained, rinsed and drained again
- 1/4 c. sesame paste (tahini)
- 2 Tbsp. water
- 1/4 c. lemon juice (fresh is best)
- 1/4 c. extra virgin olive oil
- dash of salt or to taste
- freshly ground black pepper to taste
- paprika
Directions

1In bowl of food processor or blender, combine first five ingredients; process until smooth and creamy in texture, scraping sides of bowl occasionally.

2Add salt and pepper.

3Taste and add salt, pepper or lemon juice as needed.

4If too thick, add small amounts of lemon juice and olive oil.

5Transfer to a shallow bowl; sprinkle with paprika.

6Refrigerate until ready to serve.

7Eat as dip for pita bread.
