Ingredients
- 1/4 c. oil
- 1 lb. beef, cut in small cubes
- flour
- 1 large onion, chopped
- 1/2 lb. sliced mushrooms
- 2 to 4 c. beef stock
- 4 medium potatoes
- 2 large carrots
- salt and pepper
- 1 Tbsp. chopped parsley
Directions

1Heat oil in Dutch oven.

2Dredge meat in flour and brown in oil.

3Add onion and mushrooms.

4Cook until onion browns.

5Drain if necessary and return to pot.

6Add 2 cups of beef stock, salt and pepper.

7Simmer for 1 1/2 to 2 hours, stirring occasionally and add beef stock as necessary until meat is tender.

8Peel potatoes and cut into small cubes.

9Peel and shred carrots.

10Add to meat. Continue to cook until vegetables are done.

11Garnish with parsley.
