- 2 chickens, cut up
- 1 loaf stale bread
- 3/4 c. grated Parmesan cheese
- 1/4 c. chopped parsley
- 1 clove garlic, crushed
- 2 tsp. salt
- 1/8 tsp. pepper
- 1 c. melted butter
Directions

1Remove crust from bread and grate bread into fine crumbs, using coarse side of grater.

2There should be 2 cups crumbs. Spread out on flat pan to dry overnight.

3Mix the crumbs with the cheese, parsley, garlic, salt, and pepper.

4Dip each piece of chicken into melted butter, then into the crumb mixture.

5Be sure each piece is well coated.

6Arrange in open, shallow roasting pan. Put remaining butter over all and bake 1 hour, until fork-tender, in 350° oven.

7Do not turn, but baste frequently with pan drippings.

8Makes 4 to 6 servings.
