- 1 loaf unsliced bread
- 3/4 c. grated Parmesan or Romano cheese
- 1/4 c. chopped parsley (fresh or dry)
- 1 clove garlic, crushed or minced
- 2 tsp. salt
- 1/8 tsp. pepper or 1 tsp. garlic salt
- 1/4 lb. butter
Directions

1Remove crust from loaf of unsliced bread.

2Grate into fine crumbs (2 or more cups).

3Spread out on pan to dry overnight.

4(May substitute this amount of cornflake crumbs.)

5Mix crumbs with cheese, parsley, garlic, salt and pepper.

6Dip each piece of chicken into melted butter (1/4 pound in all), then into crumb mixture.

7Be sure each piece is well coated.

8Arrange pieces without overlapping in a shallow roasting pan.

9Dot with 2 tablespoons of butter.

10Bake 1 hour or until fork-tender, at 350°. Do not turn pieces.
