  • 1 loaf unsliced bread
  • 3/4 c. grated Parmesan or Romano cheese
  • 1/4 c. chopped parsley (fresh or dry)
  • 1 clove garlic, crushed or minced
  • 2 tsp. salt
  • 1/8 tsp. pepper or 1 tsp. garlic salt
  • 1/4 lb. butter

    Remove crust from loaf of unsliced bread.

    Grate into fine crumbs (2 or more cups).

    Spread out on pan to dry overnight.
  4. 4
    (May substitute this amount of cornflake crumbs.)

    Mix crumbs with cheese, parsley, garlic, salt and pepper.

    Dip each piece of chicken into melted butter (1/4 pound in all), then into crumb mixture.

    Be sure each piece is well coated.

    Arrange pieces without overlapping in a shallow roasting pan.

    Dot with 2 tablespoons of butter.

    Bake 1 hour or until fork-tender, at 350°. Do not turn pieces.
