  • 7 or 8 oz. shredded coconut
  • 4 eggs
  • 1 3/4 c. sugar
  • 1/2 stick butter, melted
  • 1/2 c. self-rising flour
  • 2 c. milk
  • 1 tsp. vanilla

    Grease and flour 2 (9-inch) pie pans.

    Beat eggs well and add sugar, flour and milk.

    Add vanilla and melted butter.

    Stir in coconut.

    Divide mixture to full two pie pans.

    Bake at 350° for 25 minutes or until golden brown. Makes its own crust.
