  • 1 (8 oz.) can crushed pineapple, drained
  • 1/2 c. buttermilk baking mix
  • 1/4 c. milk
  • 1 (15 oz.) can cream of coconut (1 1/2 c.)
  • 1 c. flaked coconut
  • 1 c. flaked coconut

    Heat oven to 350°.

    Beat all ingredients, except 1 cup coconut, until blended.

    Sprinkle with cup of coconut.
