- 6 c. milk
- 1 c. yellow cornmeal
- 1/2 c. black molasses
- 1/4 c. sugar
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 c. melted butter
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 2 eggs, well beaten
Directions

1Preheat oven to 250°.

2Simmer milk; remove from heat.

3Combine cornmeal, molasses, sugar, ginger, cinnamon, nutmeg, butter, salt, baking soda, eggs and half the milk in a bowl.

4Whisk thoroughly. Stir in remaining milk.

5Pour into a well-greased 2 to 3-quart baking dish.

6Bake 5 to 7 hours, occasionally until firm.
