Irish Coffee Cake

Ingredients

  • 4 oz. butter
  • 6 oz. flour, sifted
  • 1 Tbsp. brown sugar
  • 1/2 oz. gelatin
  • 1 pt. whipping cream
  • 1 jigger whiskey
  • 4 oz. sugar
  • 2 eggs, beaten
  • 1 pt. brewed coffee
  • grated chocolate or nuts

Directions

    Beat butter and 4 ounces sugar until white and creamy.

    Add beaten eggs and mix together.

    Mix in flour.

    Pour into oblong baking pan and bake at 325° for about 50 minutes.

    Turn onto wire rack and cool.

    Make coffee.

    Add gelatin, brown sugar and whiskey and pour evenly over cake.

    Chill about 1 hour.

    Spread the whipped cream over cake.

    Decorate with grated walnuts.
