- 1 1/2 lb. lamb, cut in pieces for stew
- 3 Tbsp. cooking oil
- 2 tsp. salt
- pepper to taste
- 5 medium potatoes, peeled
- 5 carrots, cut crosswise
- 1 medium onion
- 2 1/2 c. water
- parsley
Directions

1Wipe meat with damp cloth; dredge in flour and brown slowly in oil on all sides.

2Add 1 cup water. Cover and simmer 45 minutes. Add salt, pepper, diced potatoes, carrots and onion with 1 1/2 cups water.

3Continue simmering until tender. Add parsley before serving.
